expressing our gratitude and happily overindulging. But all that gravy,

Enter: Thanksgiving Recovery Soup, a simple mixture of
homemade turkey stock (store-bought turkey stock will also do), fresh ginger, herbs, and leftover turkey and vegetables.
Not only is it totally delicious and comforting, but super healthy,
too. Ginger helps regulate your digestive system and ease stomach
cramps, gelatin-rich turkey stock promotes gut health (and, in turn,
immunity), and protein-rich turkey and fiber-packed vegetables
help rebalance your blood sugar for more stable energy. These
nourishing ingredients make this an ideal soup for slurping if you have a

Thanksgiving Recovery Soup
Serves 6
6 slices unpeeled ginger
6 cups turkey stock
3 cups leftover vegetables (sweet potatoes, green beans, turnip, etc)
1½ cups leftover shredded turkey
¼ cup chopped fresh herbs
1. Add ginger and turkey stock to a large pot and simmer for 15 minutes. Discard the ginger.
2. Add vegetables, leftover turkey, and herbs to pot and stir. Salt and pepper to taste.
3. Serve up that wholesome goodness!
